The carrot roll is a quick, delicious, and very tasty vegetable-based recipe, a sort of meatless meatloaf. My daughter Matilde loves carrots, so I thought of preparing a little recipe that, as I imagined, she liked very much. The carrot roll is a second course (but it’s also great as an appetizer) soft and with a creamy and stringy filling, I used turkey breast, scamorza cheese, and spreadable cheese, but you can fill it as you like, it’s too good, it will disappear in no time!

Ingredients
- 14 oz carrots
- 5 oz scamorza cheese
- 3.5 oz spreadable cheese
- 1.75 oz grated Parmesan cheese
- 3.5 oz turkey breast
- 2 eggs
- to taste salt
- to taste black pepper
- to taste extra virgin olive oil
Steps
The carrot roll is very simple and quick to prepare, first peel the carrots, grate them with a large-hole grater (the one you use to grate cheese into flakes) and dry them with kitchen paper (or squeeze them if you notice they are very moist) to remove excess liquid.
Season the grated carrots with eggs, grated Parmesan cheese, salt, black pepper and mix all the ingredients well.
Spread the mixture on a sheet of parchment paper, form a rectangle about half an inch thick and fill it with slices of turkey breast, spreadable cheese, and scamorza cheese.
With the help of the parchment paper, form a roll, seal the ends well and close it like a candy.
Bake the carrot roll in a preheated oven at 392 degrees Fahrenheit for about 30 minutes, then unwrap it, pour a little extra virgin olive oil on top, and bake it for another 5 minutes so that it gets golden brown on the surface.
Notes:
The carrot roll can be stored at room temperature for a few hours or in the fridge for a couple of days. You can fill it with the ingredients you prefer, other cold cuts like cooked ham or speck are also great, or you can make it with just cheese for a vegetarian version.
