Cauliflower Gratin Without Bechamel

The cauliflower gratin without bechamel is a vegetarian and vegan recipe that’s simple, quick, and very delicious. Cauliflower is a vegetable I really love and cook often; for us, it simply cannot be missing from the Christmas tables. I’ve prepared many versions and couldn’t resist sharing this one with you. Quick, clever, soft inside and crunchy outside, the cauliflower gratin without bechamel is prepared in just a few minutes without even parboiling or boiling the cauliflower; everything raw and into the oven or air fryer, no frying involved! The cauliflower gratin without bechamel is wrapped in a sort of egg-free and yeast-free batter, with a perfect consistency that does not run but adheres perfectly to the cauliflower, which you can serve either as an appetizer or side dish, ideal for Christmas, New Year’s Eve, New Year’s Day, and Epiphany. It’s perfect even for preparing in advance the day before; simple but truly delicious!

Ingredients

  • 1.7 cups water
  • 0.8 cups corn flour
  • 1/2 cup breadcrumbs
  • 1 tbsp extra virgin olive oil
  • to taste salt
  • to taste black pepper
  • to taste spices

Steps

  • The cauliflower gratin without bechamel is very simple and quick to prepare. First, clean the cauliflower and break it into small florets.

  • In a bowl, combine corn flour, breadcrumbs, spices to taste (I used paprika and garlic powder), black pepper, salt, and water. Stir, add the oil, and mix all the ingredients, obtaining a fairly thick batter.

  • Pierce a piece of cauliflower at a time with a fork and dip it into the batter, letting the excess drip off. Place the cauliflower gratin without bechamel on a baking sheet lined with parchment paper and bake it in a preheated oven at 390°F for 20/25 minutes until golden brown. At the end of cooking, sprinkle a pinch of salt on top.

Tips:

The cauliflower gratin without bechamel can be stored at room temperature for a few hours or in the fridge for 2/3 days. You can add any preferred ingredients to the batter. You can also cook it in an air fryer at 375°F for about 20 minutes. You can also prepare it the day before and keep it in the fridge to cook the next day. For an extra indulgent touch, you can also fry it.
