Cheesy Mashed Potatoes

The cheesy mashed potatoes are a quick, easy, tasty, and super delicious recipe. I wanted to prepare a potato side dish but didn’t feel like making the classic roasted potatoes, so I boiled them, mashed them with a glass directly on the baking sheet, seasoned them with oil, spices, and a good amount of cheese. What a spectacle! The cheesy mashed potatoes are gooey, soft inside, and crispy outside, simple but super tasty, perfect not only as a main course but also as an appetizer or vegetarian main dish, made like this they will please both adults and children, they are truly irresistible!

Ingredients

  • 9 oz scamorza cheese
  • 8 potatoes
  • 3 tablespoons extra virgin olive oil
  • to taste salt
  • to taste black pepper
  • to taste spices

Steps

  • The cheesy mashed potatoes are super easy and quick to prepare; first, peel the potatoes and place them in a pot with cold water, bring to a boil and cook for 10/15 minutes, pierce them with a fork to check if they are done.

  • Place the potatoes on a baking sheet and mash them with the bottom of a glass, adjust them quickly if necessary, brush them with extra virgin olive oil, season with salt, spices to taste (I used rosemary, paprika, thyme, and black pepper), and the scamorza cheese grated with a coarse grater (the one you use to grate cheese flakes).

  • Bake the cheesy mashed potatoes in a preheated oven at 392 degrees Fahrenheit for about 20 minutes, until they are well golden brown.

Tips:

Cheesy mashed potatoes can be kept at room temperature for a few hours or in the fridge for a couple of days. Instead of scamorza, you can use mozzarella (only if well-dried), provolone, or another melting cheese of your choice.
