Chick Crackers

The chick crackers are an Easter appetizer that absolutely cannot be missing from your Easter tables! Years ago I prepared my salty chicks that you loved, now here is another uncooked appetizer that is too cute and really delicious! Actually, I first saw them here, but my idea was very similar; these cheese chick crackers are exquisite, perfect even for an aperitif, they are prepared in just a few minutes and with few ingredients without cooking anything, they are super clever and incredibly tasty, perfect even as edible placeholders!

Ingredients

  • 10.6 oz spicy gorgonzola (a slice)
  • 1.8 oz grated parmesan
  • 12 salty crackers
  • 2 black olives
  • Half teaspoon turmeric powder
  • Half carrot

Steps

  • Chick crackers are super easy and quick to prepare. First, take the slice of spicy gorgonzola and cut it into 12 pieces. If you don’t like spicy gorgonzola, you can use fresh goat cheese (not matured) or another soft but not creamy cheese; otherwise, you won’t be able to work it well.

  • Take a piece of cheese and work it with your hands until you get a ball. Season the grated parmesan with turmeric; this way, it will turn yellow. Roll all the cheese balls in the “yellow” parmesan and place each ball on a salty biscuit (or cracker).

  • Cut slices and then small triangle-shaped pieces of carrots to create the feet and beak of the chicks. Cut small pieces of black olive to make the eyes (for the most rounded and precise shape possible, use a pastry nozzle with a round tip to “pierce” the olives).

  • The chick crackers are ready, see how easy they are? 😀

Advice:

The chick crackers can be stored at room temperature for a few hours or in the fridge for a couple of days. As mentioned above, if you don’t like gorgonzola (and I emphasize that you need the spicy one; the sweet one is not suitable because it is too creamy), use a cheese with a similar texture like goat cheese, a veined cheese, or a very dry ricotta. Instead of olives, you can use peppercorns to make the chick’s eyes. Instead of turmeric parmesan, you can use any yellow grated cheese, like cheddar.
