Chicken and Bacon Bites

The oven-baked chicken and bacon bites are a super tasty, super easy, and quick recipe to prepare. I had some chicken breast to cook, expiring bacon sticks, and thought of making these breaded strips that were a hit. The chicken and bacon bites are crunchy and golden on the outside and tender inside, flavorful and very appetizing, perfect with a side of salad or roasted potatoes, they will be loved by both adults and children!

Ingredients

  • 1.5 lbs chicken breast
  • 3.5 oz bacon
  • 2/3 cup cornmeal
  • 1/2 cup grated Parmesan cheese
  • 1 clove garlic
  • 1 sprig parsley
  • to taste salt
  • to taste black pepper
  • to taste spices
  • to taste extra virgin olive oil

Steps

  • The oven-baked chicken and bacon bites are very simple and quick to prepare. First, cut the chicken breast into small pieces, place them in a bowl, and salt them.

  • Add the bacon sticks, cornmeal, grated Parmesan cheese, spices to taste (I used rosemary, thyme, paprika, and garlic powder), minced garlic, and parsley, and mix all the ingredients well.

  • Transfer the chicken and bacon bites to a baking tray and spread them evenly, drizzle with a little extra virgin olive oil, and bake them in a preheated oven at 350°F for 20-25 minutes, until they are golden brown.

Notes:

The oven-baked chicken and bacon bites can be stored in the fridge for a couple of days. You can use breadcrumbs instead of cornmeal. You can replace bacon with pancetta.
