Ingredients
- 1.6 lbs chicken breast
- 7 tbsps cornstarch
- 2 eggs
- 1 onion
- 1 carrot
- 1 clove garlic
- 1 sprig parsley
- to taste salt
- to taste black pepper
- to taste paprika
- to taste olive or seed oil for frying
Steps
Chicken fritters are very simple and quick to prepare, first put parsley, onion, garlic, carrot in a chopper and chop them finely, set them aside.
In the same chopper, chop the chicken breast.
Combine the meat with the mixture, add the cornstarch, eggs, salt, black pepper, paprika and mix all the ingredients well.
Take a little dough with a spoon and form the chicken fritters, cook them in hot olive or seed oil at medium-low heat for 4/5 minutes on each side, then drain them on absorbent paper and serve.
Tips:
Chicken fritters can be stored in the fridge for a couple of days. If you’re using fresh chicken, you can keep them in the fridge, raw, for a couple of days; with thawed chicken, you should cook them the same day. You can also freeze them raw. To make them even more flavorful, add some grated cheese to the dough. You can also bake them in the oven at 390°F for 20/25 minutes or in an air fryer at 355°F for 20 minutes, adding a little oil on top first.
