The chicken skewers with roasted cherry tomatoes are a simple, tasty, and delicious main dish with a side. I had some chicken breast sliced and didn’t feel like making the usual cutlets, so I cut them into strips, breaded them, and skewered them. To create a complete dish, I also added some cherry tomatoes, which I seasoned with a bit of brown sugar to make them confit. So delicious! The chicken skewers with roasted cherry tomatoes are tender and flavorful, with a golden and crispy breading, without eggs and milk, and will solve your dinner in just a few minutes!

Ingredients

  • 1.1 lbs chicken breast
  • 1 cup breadcrumbs
  • 12 cherry tomatoes
  • 1 clove garlic
  • 1 sprig parsley
  • to taste salt
  • to taste black pepper
  • to taste spices (as preferred)
  • to taste extra virgin olive oil

Steps

  • Chicken skewers with roasted cherry tomatoes are super easy and quick to prepare. First, cut the chicken breast into strips (I used scissors, but you can also use a knife) and season with salt.

  • In a bowl, combine breadcrumbs, minced garlic and parsley, spices as preferred, and pepper, then mix. Add the chicken strips and coat them evenly. Skewer the meat, folding it frequently onto the stick.

  • Add the cherry tomatoes cut into pieces and salted to the remaining breadcrumbs, add, if you like, a tablespoon of brown sugar to make confit tomatoes, and mix well.

  • Place the chicken skewers on a baking tray, add the breaded tomatoes, the remaining breadcrumbs, a drizzle of extra virgin olive oil, and bake the chicken skewers with cherry tomatoes in a preheated oven at 392°F for about 25 minutes.

Notes:

The chicken skewers with roasted cherry tomatoes can be kept at room temperature for a few hours or in the fridge for a couple of days. If you don’t want to make confit tomatoes, feel free to omit the sugar. To make the skewers even tastier, you can add some grated Parmesan to the breading.
