Chocolate and Jam Cookies

The chocolate and jam cookies are super delicious and chocolatey cookies, similar to a Sacher cake. I had some apricot jam in the fridge and wanted to make a treat that reminded me of one of my favorite cakes, so I made these fragrant cookies with a creamy filling that are a real delight. The chocolate and jam cookies are made with a cocoa shortcrust pastry, filled with jam and a chocolate coating (milk or dark), perfect for breakfast or a snack, they are a real treat that will win you over with the first bite!

Ingredients

  • 2 cups all-purpose flour
  • 5 oz chocolate (milk or dark)
  • 1/2 cup sugar
  • 1/2 cup butter
  • 1/4 cup unsweetened cocoa powder
  • 1 egg
  • 1 tsp baking powder
  • 1 pinch salt
  • as needed jam

Steps

  • The chocolate and jam cookies are very simple and quick to prepare. First, put the flour, unsweetened cocoa powder, sugar, baking powder, and a pinch of salt in a bowl and mix.

  • Add the egg, the butter at room temperature, and form a soft, compact dough. Roll out the pastry on a lightly floured parchment paper using a rolling pin, forming a rectangle about 3/8 inch thick.

  • Spread a bit of apricot jam on the pastry (leaving a bit of margin on the sides and along the top edge) and, using the parchment paper underneath, form a roll, close the ends well and turn the seam side down.

  • Bake the roll in a preheated oven at 355°F for about 40 minutes. Once baked, melt the chocolate (you can use either dark or milk, I chose the latter) in the microwave or in a double boiler and pour it over the hot roll.

  • Once the chocolate is no longer soft, cut the roll into slices about 3/4 inch thick, thus obtaining the chocolate and jam cookies.

Notes:

The chocolate and jam cookies can be stored at room temperature for 3-4 days, you can also keep them in the fridge if you prefer. The chocolate coating is optional, but I obviously recommend adding it to make the cookies even more delicious and chocolatey.
