The cold rice with eggs and ham is a fresh, easy, and delicious summer dish. As the beautiful season approaches, I increasingly crave preparing quick, tasty, and appetizing dishes like rice salads. Cold rice with eggs and ham with arugula, mayonnaise, and primosale cheese is excellent not only for a quick lunch but also as an appetizer, for a cocktail party, a celebration, or a buffet, ideal to enjoy even outside the home, at the beach, in the park, or at the office!

Ingredients
- 1 1/2 cups rice for salads
- 5 oz cooked ham
- 3 1/2 oz primosale cheese
- 2 oz arugula
- 3 hard-boiled eggs
- 2 tbsp extra virgin olive oil
- 1 tbsp mayonnaise
- 1 lemon
- to taste salt
- to taste black pepper
Steps
● Cold rice with eggs and ham is very simple and quick to prepare. First, place the eggs in a small pot with cold water, bring to a boil, and let them cook for 7 minutes until hard-boiled. Cook the rice in boiling salted water for about 12 minutes (check the exact cooking time on the package).
● Shell the hard-boiled eggs and place them in a bowl, mash them with a fork, and add the chopped cooked ham and cheese, the well-drained rice, mayonnaise, extra virgin olive oil, lemon juice, pepper, oregano, and arugula, and mix all the ingredients well.
● Cold rice with eggs and ham is ready. You can enjoy it immediately, but I recommend letting it rest in the fridge for at least 30 minutes before serving.
Notes:
Cold rice salad with eggs and ham can be stored in the fridge for a couple of days. If you don’t want to add cheese, replace it with another hard-boiled egg. If you prefer not to use mayonnaise, add another teaspoon of oil.
