Egg-Free Brioches

The egg-free brioches are little brioches that are fragrant and ultra-soft with a creamy filling, made with a simple dough without eggs, prepared in just a few minutes using a fork, without a mixer or planetary mixer. I made these egg-free brioches for breakfast, filling them with some berry jam but you can fill them with any filling you prefer like Nutella, pistachio cream, or pastry cream. Egg-free brioches remain soft even the next day and the day after that, with these quantities you will make as many as 12, you will love them!

Ingredients

  • 2 3/4 cups Manitoba flour
  • 1/2 cup milk
  • 1/3 cup water
  • 1/3 cup sugar
  • 2 tbsp butter
  • 5 g fresh yeast
  • 1 lemon zest
  • 1 pinch salt
  • to taste vanilla
  • to taste jam
  • to taste almond flakes
  • to taste milk (for brushing)

Steps

  • Egg-free brioches are very simple and quick to prepare, first put in a bowl the Manitoba flour, crumbled fresh yeast, sugar, warm milk and water, grated lemon zest, vanilla and quickly mix with a fork, leaving the dough a bit “rough”.

  • Add the room temperature butter, a pinch of salt and form a soft and compact dough, work it on a work surface and put it back into the bowl to rise for a couple of hours, cover it with a cloth and place it in a warm and dry place, I keep it in the oven off, with the light on.

  • After the rising time, roll out the dough with your hands, forming a rectangle (approximately 12×14 inches), about 1/2 inch thick.

  • Fill the brioche dough with jam (or with the filling you prefer) and cut it into 6 parts and then in half, thus obtaining 12 pieces.

  • Roll each piece onto itself, forming a sort of bundle. Place the egg-free brioches on a baking tray and let them rise for another hour.

  • Brush the egg-free brioches with a little milk, garnish them with chopped almonds and bake them in a preheated oven at 350°F for 25/30 minutes, until golden.

  • Remove the egg-free brioches from the oven and garnish them, if you like, with a sprinkle of powdered sugar.

Advice:

The egg-free brioches keep at room temperature for 4/5 days. You can customize the filling with the ingredients you prefer, adding dark chocolate chips, but also filling them after baking or leaving them plain. You can replace the butter with vegetable oil (same amount, although with butter they will be tastier, softer, and more fragrant).
