Exotic Rice Salad

The exotic rice salad is a quick, fresh, and truly delicious cold first course for summer. I ate this dish during an aperitif with friends and fell in love with it! I would have never thought of such a combination, even using two types of rice, but I assure you it’s so good that words can’t describe (and not like pineapple pizza :D), and I’m sure you’ll love it too. The exotic rice salad with smoked salmon and fresh fruit like pineapple and kiwi is perfect as a unique dish, first course, or even as an appetizer, perfect to take outside, to the sea, office, beach, park, or wherever you like, ideal for a buffet or an aperitif, you’ll make a great impression!

Ingredients

  • 7 oz smoked salmon
  • 7 oz pineapple
  • 3/4 cup rice for salads
  • 3/4 cup black Venere rice
  • 3 kiwi
  • 1 3/4 oz arugula
  • 1 lemon
  • to taste salt
  • to taste extra virgin olive oil

Steps

  • The exotic rice salad is very simple and quick to prepare. First, cook the black Venere rice in salted boiling water for a few minutes (I cooked it for 5 minutes, but check the cooking time on the package – 15 min. for the one I used, it was precooked – to calculate the correct time), then add the white rice and cook it for the time indicated on the package (I cooked mine for 10 minutes), keep it al dente. Alternatively, to better preserve the colors of the two types of rice, cook them separately (I used one pot to save time).

  • Meanwhile, cut the fruit and smoked salmon into small pieces and coarsely chop the arugula.

  • Drain the rice and put it in a bowl, add the pineapple, kiwi, and smoked salmon, and give it a good mix; then add the arugula, lemon juice, extra virgin olive oil, and mix all the ingredients well.

  • The exotic rice salad is ready, you can enjoy it immediately or, better yet, let it rest in the fridge for a few minutes so it cools down and flavors nicely.

Notes:

The exotic rice salad can be stored in the fridge for a couple of days. You can replace the fruit (one or both) with avocado or add it along with the rest. Instead of the classic rice for salads, you can use basmati rice.
