This time, I decided to prepare some delicious, fluffy and crispy fritters, and I must say it was a great choice! Fennel fritters can be made in just a few minutes without even pre-boiling the fennel. I used some delicious fennel I got from MD, which always has a fresh and tasty produce section. They are perfect as an appetizer or second course, ideal for an aperitif, delicious on their own, and perfect to accompany your favorite sausages, as well as with cold cuts and cheeses!

Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 cup water
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1 fennel
- Half packet instant yeast for savory preparations

- as needed vegetable oil (for frying)
Steps
Fennel fritters are very simple and quick to make. First, clean the fennel and cut it into small pieces.
In a bowl, place the water, eggs, grated Parmesan cheese, flour, yeast, salt, and black pepper, and mix with a fork until you get a smooth, lump-free batter. Incorporate the fennel and blend it well.
Scoop some batter with a spoon and drop it into the hot oil, let the fennel fritters cook on both sides until golden. Keep the flame medium-low, it will take less than 10 minutes in total.
Drain the fennel fritters on absorbent paper and serve them.

Fennel fritters can be stored at room temperature for a few hours or in the fridge for a couple of days.
