The feta cookies are delicious cheese snacks, crispy and tasty salty cookies. I wanted to prepare some appetizers for an aperitif, I had some feta to use up, and I made these delightful cookies. Feta cookies are made with only 3 main ingredients, without butter, eggs, or yeast, great for a buffet, a party, or aperitif, delicious on their own and perfect to accompany with cold cuts, vegetables, or savory creams; they will be a hit!

Ingredients
- 1 1/4 cups all-purpose flour
- 4 1/2 oz feta
- 3 1/2 tbsps extra virgin olive oil
- to taste black pepper
- to taste oregano
Steps
● Feta cookies are super easy and quick to prepare. First, place the flour, black pepper, oregano, crumbled feta, extra virgin olive oil in a bowl, and form a soft and compact dough.
● Work the dough on a work surface and shape it into a roll about 1 1/4 inches thick, then cut it into slices about 1/2 inch thick.
● Arrange the feta cookies obtained in this way on a baking tray lined with parchment paper and bake them in a preheated oven at 356 degrees Fahrenheit for about 25 minutes, until they are golden.
Notes:
Feta cookies keep at room temperature for 4-5 days. You can customize these snacks with your favorite ingredients; you can add green or black olives, sun-dried tomatoes, nuts, or spices as you like.
