The flatbreads with omelette are a quick, super easy, and delicious recipe. For dinner, I wanted to prepare some flatbreads but decided to do something different, stuffing them, among other things, with omelette. Flatbreads with omelette or mini omelette flatbreads are truly delightful, they can be prepared in just a few minutes and are loved by both adults and kids. They are soft and have a gooey filling, perfect for a quick lunch or dinner, ideal to take to the beach, the park, or the office. You can customize them with the ingredients you prefer 😀

Ingredients
- 5.3 oz scamorza
- 3.5 oz turkey breast
- 1.8 oz grated Parmesan cheese
- 0.9 oz Pecorino (grated)
- 0.9 fl oz water
- 4 eggs
- 2 flatbreads
- 1 sprig parsley
- to taste salt
- to taste black pepper
- to taste arugula
Steps
• Flatbreads with omelette are super easy and quick to prepare. First, put the eggs, grated Parmesan and Pecorino, chopped parsley, water, salt, and black pepper in a bowl and mix.
• Pour a drizzle of oil on the base of a pan and heat it, add half of the omelette mixture and let it cook for 3-4 minutes, then cover the omelette with a flatbread, press well, and flip it (do not flip the omelette before placing the flatbread on top, otherwise it will not stick to it).
• Stuff the flatbreads with omelette with the scamorza cheese, slices of turkey breast, and a bit of arugula, fold in half, and serve. If you prefer the cheese to be very gooey, let them heat for a few more seconds on each side.
Notes:
Flatbreads with omelette can be stored at room temperature for a few hours or in the fridge for a couple of days. Of course, you can customize the filling with the ingredients you prefer.
