The flourless almond cake is a simple, soft, and delicious dessert, prepared in just a few minutes and without flour, butter, oil, milk, or yeast. Initially, I wanted to prepare almond pastries, but then I decided to make a soft and fragrant little cake with just 3 main ingredients, and it turned out like a cloud! The flourless almond cake melts in your mouth, and being gluten-free is perfect for celiacs, one bite is enough to fall in love with it!

Ingredients
- 1 1/4 cups blanched almonds (or almond flour)
- 6 tbsp sugar
- 3 eggs
- 1 pinch salt
- 1 lemon zest
- to taste powdered sugar
Steps
The flourless almond cake is very simple and quick to prepare. First, beat the eggs with the sugar and a pinch of salt until they become fluffy and frothy, using electric beaters; it will take about 5 minutes.
Add the grated lemon zest, the almond flour, and gently mix with a spatula, being careful not to deflate the mixture.
Transfer the mixture into a baking pan lined with parchment paper and bake the flourless almond cake in a preheated oven at 350°F for about 30 minutes, until golden.
Once baked, gently remove the flourless almond cake from the pan and garnish it with a dusting of powdered sugar.
Tips:
The flourless almond cake keeps at room temperature for 5/6 days. You can use already prepared almond flour or finely grind blanched almonds into flour.
