The gooey potato pancake is a delicious giant fritter, a clever recipe, quick and super tasty, a delicious dinner saver, ready in just a few minutes. I didn’t have much in the fridge and pantry, nothing ready for dinner, so I took 4 potatoes, grated them, cut a piece of cheese, and made this delight. It was literally a hit! The potato pancake is crispy on the outside and soft and gooey on the inside, perfect as a vegetarian main course, side dish or appetizer, you don’t even have to parboil the potatoes, just grate them raw, assemble all the ingredients, a drizzle of oil in the pan and let it cook!

Ingredients
- 1.5 lbs potatoes (already peeled)
- 5.3 oz scamorza cheese
- 3 tbsps cornstarch
- 3 tbsps grated Parmesan cheese
- to taste salt
- to taste black pepper
- to taste spices (as preferred)
- to taste extra virgin olive oil
- to taste breadcrumbs
Steps
The gooey potato pancake is very simple and quick to prepare, first peel the potatoes and grate them with a large-holed grater (the one used for grating cheese into flakes).
Put the grated potatoes in a bowl, add the cornstarch, grated Parmesan cheese, spices as preferred (I used rosemary, paprika, and garlic powder), salt, black pepper and mix everything together.
Pour a drizzle of extra virgin olive oil in a pan, put half of the potato mixture and level it well, add the scamorza cheese in small pieces, cover the filling with the remaining grated potatoes and compact well.
Sprinkle some breadcrumbs and a drizzle of oil on the surface of the potato pancake and let it cook, over medium-low heat and uncovered, for 10 minutes on each side, turning it like an omelet, it should be well browned.
Notes:
The potato pancake can be stored at room temperature for a few hours or in the fridge for a couple of days. If you like, you can also fill it with cold cuts, vegetables or other as preferred.
