The baked grated potato pizza is a super delicious and very quick recipe to prepare. I had an almost empty pantry and fridge and didn’t know what to make for dinner, so I took the 4 potatoes I had, a few slices of coppa, and some cheese, and made this delicious flatbread, not made in a pan but baked in the oven (or in an air fryer). Cheesy, soft inside, and crispy outside, the grated potato pizza is truly amazing, easy, and super tasty, without eggs, just assemble everything and into the oven, it is perfect as an appetizer, main course, or single dish, without cured meats for a vegetarian version, you absolutely have to try it, it will disappear in a flash!

Ingredients
- 18 oz potatoes (already peeled)
- 7 oz scamorza cheese
- 3.5 oz coppa bacon
- 1.75 oz grated Parmesan cheese
- 1/3 cup all-purpose flour

Steps
The grated potato pizza is very simple and quick to prepare. First, peel the potatoes and grate them using a coarse grater. Squeeze them to remove excess liquid (you can use sturdy paper towels or a cotton cloth).
Season the grated potatoes with salt, black pepper, spices to taste (I used paprika, rosemary, thyme, and garlic powder), flour, grated Parmesan cheese, and mix well all the ingredients together.
Grease a baking pan with a drizzle of extra virgin olive oil and cover the base and sides with half the potato mixture. Fill with a few slices of coppa bacon, scamorza cheese (or well-drained mozzarella), more bacon, and cover the filling with the remaining potato mixture.
Brush the surface of the grated potato pizza with a drizzle of oil and bake in a preheated oven at 430°F for 20-25 minutes, until golden on top.
Advice:
The baked grated potato pizza can be kept at room temperature for a few hours or in the fridge for a couple of days. You can fill it with your preferred ingredients. For a gluten-free version, replace flour with potato starch or cornstarch. You can cook it in an air fryer at 400°F for 20/25 minutes or in a greased pan, over medium-low heat, for about ten minutes on each side.
