Greek-style mushrooms are a quick and delicious recipe. I had bought some champignon mushrooms and wanted to try them this way, I added black olives, cherry tomatoes, and a few other ingredients, and here it is, a delightful dish perfect as an appetizer, side dish, or vegetarian and vegan main course. Greek-style mushrooms are creamy, tender, and tasty, also excellent as a pasta sauce, try them, I’m sure this will become one of your favorite recipes with champignon mushrooms!

Ingredients
- 1.1 lbs champignon mushrooms
- 1.5 cups cherry tomatoes
- 1 oz black olives
- 3 tbsps extra virgin olive oil
- to taste salt
- to taste black pepper
- 1 clove garlic
- 1 leaf bay
- Half glass white wine
Steps
● Greek-style mushrooms are very simple and quick to prepare. First, thoroughly clean the champignon mushrooms, remove the rooted part, and slice them about a quarter inch thick.
● Pour the oil into the pan and sauté the garlic clove and bay leaf, then add the cleaned and halved cherry tomatoes, salt them, and let them brown for a few minutes.
● Deglaze the cherry tomatoes with white wine and continue cooking, with the lid on, for about ten minutes.
● Then add the mushrooms and continue cooking, still with the lid on, for another 10 minutes, stirring occasionally.
● Add the black olives, black pepper, adjust the salt if necessary, and let everything absorb the flavors for a few more minutes, the sauce should thicken.
Notes:
Greek-style mushrooms can be stored at room temperature for a few hours or in the fridge for a couple of days. You can use olives with or without the pit, green olives are also fine.
