Kinder cookies

The Kinder cookies are truly amazing cookies. Having two little girls, I received several Epiphany stockings, and in one of them, there were packages of chocolate bars that we would hardly consume on their own. So, I thought of using almost all of them to make the cookies, which are among my favorite ones, and I must say they were literally a hit! Soft, super delicious, fragrant, and with a creamy filling, these Kinder cookies are great on their own and perfect for dipping. I love them dipped in milk, cappuccino, tea, or hot chocolate. Try them; they’ll make both kids and adults happy (and it’s also a great recipe to use up leftovers or finish Epiphany chocolates :D).

Ingredients

  • 2 1/4 cups all-purpose flour
  • 2/3 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 10 chocolate bars (or 16 of the classic ones)
  • 2 eggs
  • 1 tsp baking soda
  • to taste salt
  • to taste vanilla

Steps

  • Kinder cookies are very simple and quick to prepare, first put the flour, brown sugar, granulated sugar, baking soda, salt, and vanilla in a bowl and mix.

  • In another bowl, work the room temperature butter with the eggs using electric whisks. As soon as the mixture softens, add the powders you previously mixed, and work the ingredients using a spatula.

  • Add the broken chocolate bars and mix them into the dough.

  • Take some dough with a spoon and, using your hands, form balls a bit larger than a walnut, then place the Kinder cookies on a baking tray lined with parchment paper, spacing them well, and bake in a preheated oven at 350°F for 15-20 minutes, until they are slightly golden.

  • Once baked, let the Kinder cookies cool for at least 5 minutes, touching them while still hot might cause them to break.

Advice:

Kinder cookies can be stored at room temperature for up to 2 weeks. I used large bars; if you have small ones, use 16 of them, obviously of any brand. I do not recommend replacing butter with oil in this recipe. If you don’t want to use butter, follow this recipe, substituting chocolate chips with bars. Instead, I suggest baking the Kinder cookies in two batches; do not place them too close together because they will spread during baking. Leave some space between each cookie.
