Kissed Mini Pizzas

The kissed mini pizzas are one of the types of pizza that I absolutely adore. They are delicious mini pizzas folded in half and can be filled either before or after cooking. Soft and crispy at the same time, kissed mini pizzas are a real treat. You can customize them with your favorite filling and make them in many different flavors. I made them in two versions: simple mozzarella and tomato, cooking them already filled, and with cooked ham, mushrooms, and creamy cheese, adding the filling at the end of cooking. The dough for these delicious kissed mini pizzas is prepared by hand in just a few minutes using a simple fork. You have no excuse not to make them!

Ingredients

  • 4 cups all-purpose flour
  • 1.4 cups water
  • 1.5 tbsp extra virgin olive oil
  • 2 tsp salt
  • 0.2 oz fresh yeast
  • 1 tsp sugar
  • to taste extra virgin olive oil

Steps

  • Kissed mini pizzas are very simple and quick to prepare. First, put the all-purpose flour, crumbled fresh yeast, sugar, lukewarm water in a bowl, and quickly mix all the ingredients using a fork. Add the salt once it is almost compact and let it absorb.

  • Add the extra virgin olive oil and, with your hands, form a nice dough ball, it doesn’t have to be perfectly smooth. Cover it with a cloth and let it rise for a couple of hours in a warm place; I put it in the turned-off oven with the light on.

  • After the rising time, divide the dough into 8 pieces of equal weight (about 3.5 oz each), form small dough balls and place them on a tray sprinkled with semolina flour. Let them rise for an hour.

  • Take a dough ball and roll it out to form a disc about half an inch thick. Now, you have two options: fill the kissed mini pizzas before baking or after baking. I filled some with tomato pulp seasoned with oil, salt, pepper, and oregano and diced scamorza, then closed them into half-moon shapes, while I left others empty, brushed them with a little oil, and closed them in half-moon shapes as well.

  • Place the kissed mini pizzas on a tray, brush them with very little oil, and bake in a preheated oven at 450°F for about 20 minutes until golden.

  • Gently open the empty kissed mini pizzas and fill them with your preferred filling.

Tips:

Kissed mini pizzas can be stored empty at room temperature for 2-3 days. If filled, they should be kept in the fridge. You can fill them with ingredients you prefer, like cold cuts, cheeses, vegetables, salad, tuna, salmon, pistachio, etc. To make 4 kissed mini pizzas filled with tomato and mozzarella, I used 14 oz of tomato pulp and 5 oz of mozzarella or scamorza. For the 4 filled ones, I used 7 oz of cooked ham, 7 oz of cream cheese, and 3.5 oz of mixed mushrooms.
