The mashed potatoes and speck pie is a clever savory puff pastry cake, very easy and quick to prepare. I had a roll of puff pastry close to expiration and used it to prepare a fancy recipe for dinner that was literally a hit. You won’t have to even parboil the potatoes, just assemble everything and put it in the oven, it’s fragrant, with a beautiful golden and crispy crust and soft inside, this mashed potatoes and speck pie is simply irresistible, perfect as an appetizer, main course but also for an aperitif, a buffet or a party, try it right away, it’s outrageously delicious!

Ingredients
- 12 oz potatoes (already peeled)
- 1 cup scamorza
- 4 oz speck
- 1 oz parmesan
- 1 roll puff pastry (rectangular)
- to taste salt
- to taste spices
- to taste extra virgin olive oil
Steps
The mashed potatoes and speck pie is very simple and quick to prepare, first peel the potatoes, grate them with a coarse grater and pat them with kitchen paper to absorb any excess liquids.
Add the grated scamorza, grated parmesan, spices to taste (I used black pepper, rosemary, and thyme), salt, and mix all the ingredients well.
Unroll the puff pastry roll, fill it with speck slices and place the potato and cheese mixture on top, leveling it well.
Spray a little oil on the surface (if you don’t have a sprayer, use a kitchen brush), add a sprinkle of grated parmesan and bake the mashed potatoes and speck pie in a preheated oven at 392°F for about 30 minutes, it should be golden.
Tips:
The mashed potatoes and speck pie can be kept at room temperature for a few hours or in the fridge for up to two days. Instead of speck, you can use cooked ham, bacon, or salami. Instead of scamorza, mozzarella is also good, as long as it is well-drained.
