The mini cream tarts are delightful little cakes filled with custard cream, a crispy and fragrant treat with a creamy filling. I wanted to prepare a crumb cake for breakfast, but then I thought of making a mini version, thus creating these delicious mini cream tarts. Mini cream tarts are prepared in a few minutes and are loved by everyone, young and old, with a few simple ingredients you will make perfect treats for breakfast or snack, just one bite to fall in love!

Ingredients
- 3 1/4 cups flour
- 3/4 cup sugar
- 5 1/4 oz butter
- 2 eggs (small-medium)
- 1 pinch salt
- 1 tsp baking powder
- 1 lemon zest
- 2 cups milk
- 1/3 cup sugar
- 1/4 cup cornstarch
- 2 egg yolks
- 1 lemon zest (whole)
Steps
Mini cream tarts are very simple and quick to prepare, first, make the pastry: in a bowl put the flour, sugar, baking powder, a pinch of salt, grated lemon zest, room temperature butter, and mix quickly with a fork, the butter should crumble.
Add the eggs and form a crumbly mixture, put it in the fridge and prepare the custard cream.
In a saucepan, put the milk, cornstarch, sugar, egg yolks, and mix, make sure there are no lumps, then add the whole lemon zest, feel free to use the lemon you grated for the pastry.
Turn on the stove and, stirring, bring to a boil. At this point, remove the lemon zest and continue cooking for a minute. Transfer the cream to a bowl and cover it with cling film to prevent it from drying.
Butter and flour the tart molds (if not using non-stick ones) and cover the base and border with some crumbled pastry, add some custard cream and cover with more crumbs.
Bake the mini cream tarts in a preheated oven at 350°F for 20/25 minutes, they should be golden. Finish the crumb cakes with a sprinkle of icing sugar.
Tips:
The mini tarts with custard can be stored at room temperature for 4/5 days. You can also use chocolate custard or other flavors. My molds have a diameter of 4 inches.
