The omelets in broth is an old grandma’s recipe, a simple and delicious dish that warms the heart and feels like home. This dish reminds me so much of my childhood: grandma Pina often made it with eggs from her hens and we grandkids loved it! She also used homemade broth with the chickens she raised. I, on the other hand, used my favorite ready-made broth: Mio Brodo Star – Mixed Meat. It is aromatic and good as homemade, with 100% natural ingredients and no preservatives. Moreover, it is super versatile and suitable for any preparation. With this recipe, you will get soft and very tasty omelets in broth: you absolutely have to try them, you will love them!

Ingredients

  • 1.75 oz grated Parmesan cheese
  • 0.88 oz grated Pecorino cheese
  • 6 eggs
  • 4.22 cups Mio Brodo Star – Mixed Meat
  • to taste salt
  • to taste black pepper
  • to taste nutmeg

Steps

  • Omelets in broth are very simple and quick to prepare. First, put the eggs, grated Parmesan and Pecorino cheese, salt, black pepper, and nutmeg in a bowl and mix all the ingredients well using a fork.

  • Grease a baking pan with a drizzle of oil, pour the mixture, and cook the omelet in a preheated oven at 356°F for 15/20 minutes. To check the cooking, insert a toothpick into the mixture. Once ready, remove the omelet from the oven and cut it into small cubes of about 0.39 inches.

  • Heat the Mio Brodo Star – Mixed Meat in a pot and, as soon as it starts to simmer, drop the omelet cubes into it.

  • Let the omelets in broth flavor for a couple of minutes and serve them. If you want, you can enhance them with a drizzle of extra virgin olive oil and a sprinkle of grated Parmesan cheese.
