The onion puff pastry is a savory tart made with puff pastry that is simple and quick but really delicious. In fact this wasn’t a recipe I planned in advance — I didn’t know what to make for dinner, my fridge was almost empty, I had some leftovers and ingredients to use up, so I thought to put everything together, creating one of those rustic tarts that became one of my favorites. The onion puff pastry with speck, walnuts, scamorza and gorgonzola is a true delight, excellent hot and also great cold, crispy, cheesy and flavorful; if you like these ingredients, you absolutely must try it!

Ingredients
- 5 oz scamorza cheese
- 4 oz diced speck
- 4 oz gorgonzola cheese
- 2 oz walnuts
- 1 oz Parmesan
- 3 onions
- 2 tbsp extra virgin olive oil
- 1 sheet puff pastry
- to taste salt
- to taste black pepper
Steps
The onion puff pastry is very simple and quick to prepare. First peel the onions, slice them very thinly (if you have a mandoline slicer, feel free to use it) and toss them with extra virgin olive oil, salt and black pepper.
Unroll the sheet of puff pastry and sprinkle with grated Parmesan, then add the onions, the walnuts roughly chopped, the diced speck, the gorgonzola in small pieces and the scamorza grated with a coarse grater.
Fold the edges inward and bake the onion puff pastry in a preheated oven at 392°F for 25/30 minutes, until well golden.
Tips:
The onion puff pastry can be kept at room temperature for a few hours or refrigerated for a couple of days. You can use whichever onions you prefer; I used two yellow onions and one red onion. If you don’t like gorgonzola you can omit it or replace it with a creamy cheese of your choice (Brie, taleggio, crescenza, stracchino). For a vegetarian version, omit the speck. If you want the onion flavor to be much milder, I recommend cooking them in a pan with a splash of water, oil, salt and pepper before placing them on the pastry.
