The onion tarte tatin is a simple, quick and very tasty recipe: a savory tart made with puff pastry and caramelized red onions that will win you over at the first bite. I had a few onions to use up and a sheet of puff pastry nearing its expiry, and I used these two ingredients to prepare this really indulgent rustic tart. In just a few minutes and with a few simple ingredients, you’ll make a delicious dish—perfect as a quick dinner saver, ideal as an appetizer and also great for an aperitif. I love it!

Ingredients
- 4 onions
- 2 tbsp grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- 1 tbsp brown sugar
- 1 sheet puff pastry
- to taste salt
- to taste black pepper
- to taste aromatic herbs
Steps
The onion tarte tatin is very simple and quick to prepare: first, peel the onions and slice them into pieces about 3/8 inch thick.
Line a baking pan with parchment paper and place on the bottom the extra virgin olive oil, salt, black pepper, aromatic herbs to taste (I used a mix of rosemary, parsley and thyme), brown sugar and grated Parmesan.
Add the onion slices and cover with the puff pastry, fold the edges over and prick a few holes with a toothpick.
Bake the onion tarte tatin in a preheated oven at 392°F for 25–30 minutes; the puff pastry should be nicely golden. Once baked, invert the tarte tatin and serve.
Tips:
The onion tarte tatin can be kept at room temperature for a few hours or refrigerated for a couple of days. You can use whichever onions you prefer; I recommend red onions because they are more flavorful than yellow or white ones. It’s delicious on its own, but try serving it with some gorgonzola—spectacular!
