I also added a little yogurt to make them even softer and more flavorful, and I must say they turned out really delicious! These orange pancakes are perfect for breakfast, an afternoon snack or a treat — the batter is butter-free and oil-free, they are truly special!

Ingredients
- 1 1/4 cups all-purpose flour
- 1 medium (about 4.4 oz / 125 g) orange
- 3.5 oz plain yogurt
- 1/4 cup granulated sugar
- 1 egg
- Half sachet (about 2 tsp) baking powder
- as needed butter (for greasing the pan)
Steps
Orange pancakes made in a blender are very simple and very quick to prepare. First, wash the orange well and cut it into pieces, remove any seeds, put it in a blender together with the yogurt, egg and sugar, and blend until you get a smooth mixture.
Add the flour and baking powder and blend again; the batter will be creamy.
Heat a pan (non-stick is best) and grease it with a little butter. Immediately pour a couple of tablespoons of batter, cover with a lid and cook over low heat for a couple of minutes.
Flip the orange pancake and continue cooking for about one minute, still covered.
The orange pancakes are ready to enjoy — fragrant and super soft!
Tips:
Orange pancakes can be kept at room temperature for one day or refrigerated for 2-3 days. You can use plant-based yogurt instead of regular yogurt. You can also use Greek yogurt; in that case use 4.4 oz (125 g). Instead of butter you can use a drizzle of neutral oil (e.g., seed oil) to grease the pan.
