Pasta with Pumpkin

The pasta with pumpkin is a simple dish that truly feels like home and warms the heart. Autumn has arrived, October is here, and how can you not start the new month without cooking a dish with a seasonal ingredient I love? I began here, with some delicious, fragrant, and super creamy orzo, pasta with pumpkin is a true delight. To prepare it, you only need one pot, and in no time, you’ll have a delightful cream that envelops the pasta beautifully, without using cream, spreadable cheese, or other types of cheese, just grated cheese for an extra touch of flavor. Both adults and children will love pasta with pumpkin; I always make it for the whole family, and my daughter loves it!

Ingredients

  • 21.15 cups water
  • 14 oz pumpkin
  • 12.35 oz pasta (I use orzo)
  • 1.75 oz grated Parmesan cheese
  • 3 tbsps extra virgin olive oil
  • 1 carrot (large)
  • 1 yellow onion (small)
  • 1 stalk celery
  • to taste salt

Steps

  • The pasta with pumpkin is very simple and quick to prepare. First, cut the pumpkin, peel it, remove the seeds, and cut it into pieces.

  • In a pot, add the chopped carrot and onion, the celery, extra virgin olive oil, and sauté for a couple of minutes. Then, add the pumpkin and let it cook for a few seconds. Add the water, season with salt, and cook, covered, for 15-20 minutes until the pumpkin softens.

  • At this point, remove the celery and blend everything with a hand blender. Add the orzo and adjust the salt (or any other small pasta you like). Cook the pasta for about 7 minutes (refer to the cooking time on the package), stirring occasionally. Always check that there is enough liquid; if needed, add a little more water.

  • Season the pasta with pumpkin with a bit of grated Parmesan cheese and plate it. If desired, add a drizzle of raw olive oil and a bit more grated Parmesan cheese.

Notes:

Pasta with pumpkin can be stored in the fridge for a couple of days. To make it creamy again, heat it by adding a little water. To make it even more flavorful, you can add a creamy cheese like gorgonzola, brie, taleggio, robiola, or classic spreadable cheese, even a cheese wedge.
