Puff pastries with canned peaches, jam, and ladyfingers are sweet puff pastry treats with canned fruit (or fresh fruit, if you prefer), very easy and quick to prepare. I had a roll of puff pastry close to expiration, a jar of canned peaches, open ladyfingers, jam in the fridge to use up, and I used all these ingredients to prepare crispy and fragrant bundles with a soft and creamy filling. These peach puff pastries are perfect for breakfast or a snack, ideal to be served with some ice cream or whipped cream, they’re a true delight to try as soon as possible!

Ingredients
- 8 ladyfingers
- 4 peaches, canned
- 1 roll puff pastry
- 1 egg
- to taste peach jam
- to taste powdered sugar
Steps
These peach puff pastries with jam and ladyfingers are super easy and quick to prepare. First, unroll the puff pastry and cut it into 4 parts.
Soak the ladyfingers in the syrup from the canned peaches and place two of them close together on each rectangle of puff pastry. Spread a little jam on top and place a sliced canned peach on each pair of ladyfingers.
Brush all edges of the pastry with some beaten egg, and close the peach puff pastries by folding the pastry over the filling and tucking the ends underneath the treats.
Arrange the peach puff pastries with jam and ladyfingers on a baking tray lined with parchment paper (you can use the one from the puff pastry), brush only the pastry with the beaten egg, and bake them in a preheated oven at 392°F for 25 minutes.
Garnish the peach puff pastries with jam and ladyfingers with a dusting of powdered sugar.
Notes:
The peach puff pastries with jam and ladyfingers can be stored at room temperature for 2-3 days. You can also use fresh peaches if you prefer. In this case, for the soaking syrup, you can blend a small piece of peach with a little water and sugar. Instead of ladyfingers, you can also use amaretti. I used peach jam, but apricot or other preferred jam works just fine.
