The peach upside-down cake is a fragrant and super soft dessert, with a layer of caramelized fresh fruit that makes it truly special (but, if you want, you can also use canned peaches). I had some ripe peaches and wanted to use them to prepare an “upside-down” cake that melts in your mouth. Delicious, without butter and milk, the peach upside-down cake is a true delight, perfect for breakfast, snack, or as a dessert, delicious on its own and ideal to serve with a bit of whipped cream or ice cream 😀

Ingredients
- 2 cups all-purpose flour
- 5/8 cups sugar
- 1/3 cups extra virgin olive oil
- 5 peaches
- 3 eggs
- 1 packet baking powder
- 1 lemon zest
- 3/4 cups sugar
- 1/4 cups water
Steps
The peach upside-down cake is very simple and quick to prepare. First, beat the eggs with the sugar until they become light and fluffy. Pour in the vegetable oil and mix.
Add the flour, baking powder, grated lemon zest, and mix all the ingredients well.
Prepare the caramel: in a pan, put the sugar and water, mix quickly, and turn on the heat. Let the sugar melt without stirring anymore. As soon as the mixture has a slightly golden color, turn off the heat and stir. Be careful not to burn the caramel; if it becomes very dark, it will taste bitter.
Immediately transfer the caramel into a baking pan lined with parchment paper and place the sliced peaches on top, being careful not to burn yourself.
Pour the previously prepared batter and bake the peach upside-down cake in a preheated oven at 355°F for about 40 minutes. Use a toothpick to check for doneness.
Remove the cake from the oven, flip it onto a wire rack, let it cool slightly, and remove the parchment paper.
Notes:
The peach upside-down cake keeps at room temperature for 3-4 days. If you prefer, you can also use canned peaches instead of fresh ones. If you like, you can add some crushed amaretti cookies after placing the fruit on the caramel.
