The pesto crackers are quick and delicious mini puff pastry snacks, perfect as an appetizer, for a party, or a buffet. I had two rolls of puff pastry expiring soon and decided to make some bites filled with Genovese pesto and other ingredients to make them in various flavors. The multi-flavor pesto crackers are crispy with a creamy filling, cheesy if you also add cheese, and you will prepare about 40 pieces in just 10 minutes!

Ingredients
- 1/2 cup Genovese pesto
- 2 rolls puff pastry (rectangular)
- 1 egg
- to taste cherry tomatoes
- to taste champignon mushrooms
- to taste scamorza cheese
- to taste cooked ham
- to taste zucchini
- to taste salt
Steps
The multi-flavor pesto crackers are super easy and quick to prepare. First, unroll a puff pastry sheet and spread Genovese pesto over the entire surface.
Place the second puff pastry sheet on top and press well. Cut the pastry into 8 vertical parts and 5 horizontal, resulting in 40 squares.
Press the base of a glass at the center of each pastry piece and poke holes with a toothpick.
Fill the pesto crackers with your preferred ingredients; I used champignon mushrooms (thinly sliced), cherry tomatoes (halved), zucchini (sliced into paper-thin rounds with a mandolin), diced cooked ham, and scamorza cheese.
Add a pinch of salt over the vegetables, brush the surface of the pesto crackers with beaten egg, and bake in a preheated oven at 400°F for about 20 minutes.
Notes:
Pesto crackers can be stored at room temperature for a few hours or in the fridge for a couple of days. You can customize them with your preferred ingredients that pair well with pesto, like sun-dried tomatoes, tuna, smoked salmon, olives, speck, etc.
