Phyllo pastry has become like puff pastry to me; it’s always in my kitchen and it’s a super versatile base I’ve used in many ways that helps me sort out lunches and dinners in an instant. Today I wanted to turn phyllo pastry into a sort of crispy and delicious pizza — here is the phyllo pizza, a true delight you can top with the ingredients you prefer. Ingredients

  • 1 2/3 cups cherry tomatoes (about 9 oz)
  • 1 1/3 cups scamorza cheese (shredded)
  • 1/3 cup milk
  • 1/4 cup pitted olives (sliced)
  • 2 eggs
  • 1 package phyllo pastry
  • 1 tablespoon extra virgin olive oil
  • to taste salt
  • to taste black pepper
  • to taste oregano
  • to taste extra virgin olive oil

Steps

  • Phyllo pizza is very simple and quick to prepare. First, unroll the phyllo pastry, cut it into strips about 3/4 inch wide and separate the small pieces.

  • Place the phyllo pieces into a baking pan lined with parchment paper, drizzle lightly with extra virgin olive oil and bake in a preheated oven at 392°F for about ten minutes.

  • Meanwhile, prepare the topping: in a bowl mix the eggs, milk, extra virgin olive oil, salt, black pepper and oregano. Then add the pitted olives, the cherry tomatoes cut into quarters and some scamorza grated with a coarse grater.

  • As soon as the phyllo pastry is golden, remove it from the oven and add the prepared topping, spreading it evenly over the surface. Complete with the remaining scamorza and a sprinkle of grated Parmesan, then bake the phyllo pizza in a preheated oven at 392°F for about 15 minutes.

Tips:

Phyllo pizza can be kept at room temperature for a few hours or in the fridge for a couple of days. To bring it back to its just-baked texture, reheat it in the oven or in an air fryer, if you have one. You can customize the phyllo pizza with the ingredients you prefer — add mushrooms, ham, artichokes, speck, salami, cooked vegetables, and so on — always add them to the egg mixture.
