Ingredients
- 1 2/3 cups cherry tomatoes (about 9 oz)
- 1 1/3 cups scamorza cheese (shredded)
- 1/3 cup milk
- 1/4 cup pitted olives (sliced)
- 2 eggs
- 1 package phyllo pastry
- 1 tablespoon extra virgin olive oil

- to taste black pepper
- to taste oregano
- to taste extra virgin olive oil
Steps
Phyllo pizza is very simple and quick to prepare. First, unroll the phyllo pastry, cut it into strips about 3/4 inch wide and separate the small pieces.
Place the phyllo pieces into a baking pan lined with parchment paper, drizzle lightly with extra virgin olive oil and bake in a preheated oven at 392°F for about ten minutes.
Meanwhile, prepare the topping: in a bowl mix the eggs, milk, extra virgin olive oil, salt, black pepper and oregano. Then add the pitted olives, the cherry tomatoes cut into quarters and some scamorza grated with a coarse grater.
As soon as the phyllo pastry is golden, remove it from the oven and add the prepared topping, spreading it evenly over the surface. Complete with the remaining scamorza and a sprinkle of grated Parmesan, then bake the phyllo pizza in a preheated oven at 392°F for about 15 minutes.
Tips:
Phyllo pizza can be kept at room temperature for a few hours or in the fridge for a couple of days. To bring it back to its just-baked texture, reheat it in the oven or in an air fryer, if you have one. You can customize the phyllo pizza with the ingredients you prefer — add mushrooms, ham, artichokes, speck, salami, cooked vegetables, and so on — always add them to the egg mixture.
