The potato and onion fritters are an incredibly delicious recipe, super quick and easy to prepare. I didn’t know what to make for dinner, the fridge and pantry were practically empty, I had a couple of potatoes, an onion, and I prepared these quick savory crisis-saving fritters, which were a hit. The potato and onion fritters are golden, crispy outside and soft inside, you can make them in 5 minutes without eggs and without yeast, they are vegetarian, vegan, and also gluten-free if you use rice flour (same amount as all-purpose), perfect as an appetizer, side dish, or main course. If you don’t want to fry, you can also bake them in the oven or use an air fryer!

Ingredients
- 1 lb potatoes
- 9 oz onions
- 2/3 cup all-purpose flour
- to taste salt
- to taste black pepper
- to taste spices
- to taste extra virgin olive oil
Steps
Potato and onion fritters are super easy and quick to prepare. First, peel the potatoes, grate them with a large-hole grater, and squeeze to remove excess liquids.
Add the onion sliced very thin (if you have a mandoline, use it), salt, black pepper, spices to taste (I used paprika, garlic powder, and rosemary), all-purpose flour, or mix all ingredients well.
Pour the oil into a pan and heat it. Take a bit of the mixture with a spoon to form the potato and onion fritters, let them cook over medium heat for about 7 minutes, flip them and continue cooking for another 3 minutes, they should be well golden.
Once cooked, drain the potato and onion fritters on paper towels and serve them hot and crispy.
Notes:
Potato and onion fritters can be kept at room temperature for a few hours or in the fridge for a couple of days. You can also fry them in seed oil. If you want to bake them in the oven or air fryer, brush them first with a little extra virgin olive oil. To make them tastier, you can add some grated Parmesan to the mixture.
