Potato Balls

The potato balls are quick, delicious, and delightful vegan snacks. I wanted to prepare some tasty treats for a gathering with friends and thought of creating potato pearls without eggs, milk, butter, or flour, which I didn’t fry but baked in the oven. They were a hit! The potato balls are crispy on the outside and soft on the inside, they are prepared in just a few minutes and are great on their own, perfect to accompany with your choice of sauces, ideal as an appetizer, side dish, or for a party, even for Christmas and New Year’s Eve, one leads to another, they are loved even by the little ones!

Ingredients

  • 26 oz potatoes
  • 1/3 cup potato starch (or cornstarch)
  • to taste salt
  • to taste black pepper
  • to taste spices
  • to taste extra virgin olive oil

Steps

  • Potato balls are very simple and quick to prepare, first clean the potatoes, rinse them, and place them whole in a pot with cold water, bring to a boil, and let them cook for about fifteen minutes, pierce them with a fork to check the doneness.

  • Drain the potatoes well and mash them with a potato masher (if you don’t have one where the skin stays inside, peel the potatoes), add the potato starch (or cornstarch), salt, and spices to taste, I added black pepper, paprika, chopped rosemary, and garlic powder, mix all the ingredients well and let the mixture cool.

  • Take a bit of the mixture with a teaspoon and form balls, then oil your hands slightly and coat all the balls.

  • Place the potato balls on a baking tray and bake them in a preheated oven at 392°F for 15 minutes.

Notes:

Potato balls can be stored at room temperature for a few hours or in the fridge for a couple of days. To flavor them, you can use your preferred spices/herbs, or also add small pieces of cold cuts. Of course, you can also fry them in hot seed oil until golden brown. It is important that the mixture is cold when you are going to make and especially cook the balls, otherwise, they might burst open during cooking.
