The potato bites with cheese and cooked ham are a super easy and very quick recipe to prepare. I wanted to make something tasty for dinner, I had some cooked ham and cheese to use up, so I took 3 potatoes and in a few minutes I made gooey, tasty, simple croquettes. The potato bites are without eggs, starches, flours (so gluten-free), butter or oil, they are made with only 3 main ingredients and are absolutely delicious alone or perfect to serve with sauces. I cooked them in an air fryer but you can also make them in the oven. In any case, they will disappear in a flash and even the little ones will love them!

Ingredients
- 1.1 lb potatoes (already peeled (about 3 medium potatoes))
- 3.5 oz scamorza cheese
- 3.5 oz cooked ham
- 1 sprig parsley
- to taste salt
- to taste black pepper
Steps
Potato bites are very simple and quick to prepare. First, peel the potatoes, cut them into small pieces and place them in a microwave-safe dish (I used a glass bowl). Add about 1/2 inch of water (a splash), cover with plastic wrap and cook at maximum power (about 800W) for 7–8 minutes. Alternatively, you can steam or boil them.
Drain the potatoes well and mash them with a fork. Add salt, black pepper, chopped parsley, the cooked ham cut into small pieces, and the scamorza grated using a coarse grater (the one you use to make cheese shavings). Mix all the ingredients well.
Take a portion of the mixture with your hands and shape the potato bites. Arrange them on the rack of the air fryer lightly oiled (or lined with parchment paper) and cook at 356°F for 17–18 minutes. If you don’t have an air fryer, bake them in a preheated oven at 392°F for 20 minutes.
Tips:
Potato bites can be kept at room temperature for a few hours or refrigerated for a couple of days. Instead of scamorza, you can use pizza mozzarella (not the classic fresh mozzarella as it would be too watery). You can replace the cooked ham with pancetta, speck or other cured meats of your choice. For a vegetarian version, you can omit the ham or replace it with sun-dried tomatoes or cooked vegetables.
