Potato Fritters

The potato fritters are a recipe I adore and am very fond of; my grandmother always made them when we were with my cousins. When these delicious fritters were around, it was always a celebration; she would get fresh eggs from her hens and potatoes from her garden to make these little delights. The aroma filled the whole house, and she never had time to bring them all to the table because we would take them directly from the tray she used to drain them. Simple, delicious, golden and crispy, these potato fritters are perfect as an appetizer or main course, they will make both adults and children happy, they are irresistible!

Ingredients

  • 9 oz potatoes
  • 1.75 oz grated Parmesan cheese
  • 1.75 oz breadcrumbs
  • 6 eggs
  • 1 sprig parsley
  • to taste salt
  • to taste black pepper
  • to taste extra virgin olive oil

Steps

  • Potato fritters are very easy and quick to prepare; first, clean the potatoes, peel them, cut them into small pieces, and fry them in hot oil, stirring occasionally until golden, it will take 10/15 minutes. Do not use too much oil, just enough to cover the entire base of the pan. You can use the oil you prefer; I chose extra virgin olive oil, but seed oil is also fine. Drain the potatoes and salt them.

  • In a bowl, put the eggs, grated Parmesan cheese, breadcrumbs, salt, black pepper, chopped parsley, and mix; then add the fried potatoes and blend well.

  • Take a bit of the mixture with a spoon and form the potato fritters; cook them in the same oil as before, for 4/5 minutes per side, over medium heat, they should be beautifully golden.

  • Once cooked, drain the potato fritters on absorbent paper and serve them.

Advice:

Potato fritters can be kept at room temperature for a few hours or in the fridge for a couple of days. For a lighter version, you can cook the potatoes in the oven (392°F for about 25 minutes) or in an air fryer (374°F for about 15 minutes), and, if you wish, also the fritters (in the oven at 356°F for 15/20 minutes, in an air fryer at 356°F for 10/12 minutes); of course, they won’t be quite the same, they will be a bit “drier”, but still good 🙂
