Potato Smash

The potato smash is an easy and delicious rustic savory pie. I wanted to prepare something tasty for dinner and thought of doing something with potatoes. I boiled them, mashed them, and used them as a base to make a crispy and tasty slab, added herb-cooked ham, melting cheese, and… What a show! The potato smash is a very tempting smash without eggs, flour, or yeast that will be loved by adults and children alike, try it and you’ll make it a thousand more times!

Ingredients

  • 2.2 lbs potatoes
  • 7 oz scamorza cheese
  • 3.5 oz cooked ham
  • to taste salt
  • to taste black pepper
  • to taste herbs
  • to taste extra virgin olive oil

Steps

  • ● The potato smash is very simple and quick to prepare, first of all, clean the potatoes well, I used a clean sponge without detergent, just to remove any residue, as we will use them with the skin on.

  • ● Put the whole potatoes in a pot and bring them to a boil, cook them until they are soft and you can pierce them with a fork.

  • Drain the potatoes well and put them in a non-stick baking dish, greased with a little oil, then mash them with the bottom of a glass, to form a fairly compact base.

  • ● Season the potatoes with salt, black pepper, spices to taste (I used paprika, garlic powder, thyme, and rosemary), pour a little oil on top and bake in a preheated oven at 428°F (220°C) for about 20 minutes.

  • ● Take the base out of the oven, top it with slices of cooked ham (I used herb-cooked ham), diced scamorza cheese and put the potato smash back in the oven for a few minutes (you can also keep the oven off or lower the temperature), just long enough to melt the cheese.

Notes:

The potato smash can be stored at room temperature or in the fridge for a couple of days. You can fill it with the ingredients you prefer, cold cuts, cheese, vegetables, and much more!
