The puff pastry cookies are delicious and super clever treats! I wanted to prepare dunking cookies for breakfast, but at the last minute, I realized I didn’t have enough flour. So, I took two rolls of puff pastry and made these delightful large cookies in just a few minutes, without even needing to knead. Instead of saving them for breakfast, we were finishing them all as snacks! Puff pastry cookies are very easy to make, they look like real shortcrust cookies; to make them even more appetizing, I dipped them halfway in melted chocolate and enriched them with chopped hazelnuts and shredded coconut. In short, you absolutely need to try these sweet treats, they are wonderful!

Ingredients
- 5 oz dark chocolate
- 4 tbsps sugar (2 for each puff pastry)
- 2 rolls puff pastry (rectangular)
- as needed water
- as needed coconut, nuts, or other for decoration
Steps
The puff pastry cookies are super easy and quick to prepare. First, unroll one roll of puff pastry and brush a little water over the entire surface. Add 2 tablespoons of sugar and cut the pastry into 3 equal parts horizontally. Do the same with the other pastry, thus obtaining 6 strips of pastry.
Stack the 6 strips (make sure they align well) and gently compact them. Cut the rectangle obtained, vertically, into strips about 0.6 inches wide.
Arrange the strips on a baking sheet lined with parchment paper, turning them so that one “flaky” side faces up (and the other, obviously, is in contact with the tray). Add a bit of sugar on top and bake the puff pastry cookies in a preheated oven at 350°F for about 20 minutes, until golden.
Once out of the oven, let the puff pastry cookies cool completely and dip part of them into melted chocolate (you can use dark, milk, or white, or even make a mix) and add some chopped nuts on top (I used hazelnuts, but almonds, walnuts, or peanuts are also fine) or shredded coconut.
Let the puff pastry cookies cool before enjoying/storing them.
Notes:
Puff pastry cookies can be stored at room temperature for 3-4 days. For the coating, as mentioned, you can use the chocolate and nuts you prefer. If you want, you can also leave them plain. To make them even more delicious and flavorful, you can brush the pastry not with water, but with a little melted butter.
