Pumpkin and potato pasta is an easy and quick first course, but really delicious! You’ve definitely eaten the classic pasta and potatoes, but have you ever tried adding pumpkin? What a treat! Pumpkin and potato pasta is flavorful and very creamy, thanks also to a little trick, just taste a spoonful to fall in love with it! I made it simple, in a vegetarian version, but if you want to make it even more delicious, you can add some crispy bacon or speck, or some melty provola cheese!

Ingredients
- 27 cups water (or vegetable broth)
- 14 oz pumpkin
- 14 oz potatoes
- 11 oz pasta
- 3.5 oz grated Parmesan cheese
- 1 onion
- 1 sprig rosemary
- to taste salt
- to taste black pepper
- to taste nutmeg
Steps
Pumpkin and potato pasta is very simple and quick to prepare, first peel the potatoes and pumpkin and cut them into small cubes.
Pour the extra virgin olive oil into a saucepan and sauté the chopped onion and the rosemary sprig for a couple of minutes. Then remove the rosemary and add the potatoes and pumpkin, season with salt, add the water (or vegetable broth) and let it cook for about twenty minutes.
At this point, using an immersion blender, blend about half of the potatoes and pumpkin directly in the pot, so a fantastic creamy texture will form!
Then add the pasta and let it cook for the time indicated on the package, stirring occasionally. If the pumpkin and potato pasta dries out quickly, pour a little more water or broth.
Once cooked, turn off the heat and season the pumpkin and potato pasta with some grated Parmesan cheese, black pepper, and nutmeg.
Serve the pumpkin and potato pasta and, if you like, drizzle with some raw olive oil and a bit of chopped rosemary.
Tips:
For the pumpkin and potato pasta recipe, you can use the pumpkin you prefer. I chose the dedicate variety, which has a more rustic and enveloping flesh, but the butternut or Hokkaido varieties work perfectly too. To make it even more delicious (but not vegetarian, of course), you can add some crispy speck or bacon. Some melty scamorza or mozzarella cheese also works great.
