Pumpkin Roll

The pumpkin roll is a delicious, clever, and very quick recipe. Pumpkin is in full season, I love it, and I always cook it in different ways. Last year I made pumpkin sandwiches, and today, I want to share with you a very similar recipe, perfect for the whole family. The pumpkin roll is soft, very tasty, and with a creamy filling. This recipe is gluten-free and also vegetarian if you choose an appropriate filling. The base is made with only 2 ingredients and you can fill it with your preferred ingredients. It’s perfect as a main course, and also delicious as an appetizer, and will be a hit even with the little ones!

Ingredients

  • 4 cups pumpkin (already cleaned)
  • 7 oz scamorza cheese
  • 5 oz cream cheese
  • 3.5 oz cooked ham
  • as needed extra virgin olive oil
  • as needed salt
  • as needed arugula

Steps

  • The pumpkin roll is very simple and quick to prepare. First, take the pumpkin, remove the peel, and cut thin slices, about 1/8 inch, with a knife. Do not use a mandolin (unless you have an adjustable one), as the slices would be too thin.

  • Arrange the pumpkin slices on a baking sheet lined with parchment paper to form a rectangle. I made 24 slices and formed a 6×4 rectangle.

  • Spray (or brush) a little oil on the pumpkin base, salt, and cover with grated scamorza cheese using a wide-hole grater (the kind used for flaked cheese).

  • Bake the base in a preheated oven at 355 degrees Fahrenheit for 20/25 minutes, then flip it over and fill it with your preferred ingredients. I used cream cheese, cooked ham, and arugula.

  • Using the parchment paper underneath, roll it into a tight roll, cut the pumpkin roll, and enjoy its deliciousness.

Tips:

The pumpkin roll can be stored in the fridge for a couple of days. You can fill it with your preferred ingredients. You can also use Delica pumpkin, Hokkaido, or another of your choice, just place the slices close together, without leaving gaps.
