Ingredients
- 7 oz scamorza cheese
- 1 butternut squash
- to taste salt
- to taste extra virgin olive oil
- 7 oz cream cheese
- 3.5 oz cooked ham
- to taste mixed salad
Steps
The pumpkin sandwich is very simple and quick to prepare. First, peel the pumpkin and cut it into very thin slices. However, I do not recommend using a mandoline (unless you can adjust it), because the slices would be too thin, they should be about 1/8 inch thick.
Arrange the slices on a baking sheet lined with parchment paper, slightly overlapping them, to form two rectangles (12 slices, 3 horizontally and 4 vertically for each), if there are any holes, close them with a few pieces of pumpkin.
Salt the rectangles, brush them with a little extra virgin olive oil and top with the scamorza cheese grated with a coarse grater (the one you use for grating cheese flakes), then bake them in a preheated oven at 356°F for 20-25 minutes, they should be golden.
Once cooked, remove the pumpkin sandwiches from the oven and flip them over, spread the cream cheese on the surface, add the mixed salad, the slices of cooked ham, and fold in half.
Notes:
The pumpkin sandwiches can be stored in the fridge for a couple of days, but it would be preferable to fill them at the moment. You can make the base before, then heat it and fill it, choose your own filling, you can put in the ingredients you like best.
