Ricotta Kisses

The ricotta kisses are no-bake treats that are extremely easy and quick to prepare, and truly delicious. I had some amaretti to use up, and I thought of preparing fragrant sweets with a creamy filling rich with dark chocolate chips, fresh and tasty bites to prepare in 10 minutes, perfect at the end of a meal or as a snack. The kisses will win everyone over, forget cherries, these are truly addictive!

Ingredients

  • 7 oz amaretti
  • 7 oz ricotta
  • 1.75 oz dark chocolate chips
  • 1.75 oz sugar
  • 1 espresso cup of coffee
  • to taste milk
  • to taste shredded coconut

Steps

  • The ricotta kisses with chocolate chips are very simple and quick to prepare, first put the ricotta, sugar, and vanilla in a bowl and mix with a fork, then fold in the chocolate chips.

  • Take an amaretto and fill the base with a dollop of ricotta cream using a teaspoon or, as I did (to be more precise and clean), put the cream in a piping bag with or without a nozzle.

  • Close with another amaretto and press gently. Mix the milk and coffee (I used one espresso cup of coffee, about 1 oz, and 3 oz of milk), quickly dip the ricotta kisses and immediately roll them in the shredded coconut.

  • Let the ricotta kisses rest in the fridge for at least 30 minutes before serving.

Advice:

Ricotta kisses can be stored in the fridge for 3/4 days. You can soak the treats in milk only or coffee only (in the latter case, choose whether to sweeten it beforehand) or make a mix of milk and cocoa for a more chocolaty version. If you prefer, you can omit the chocolate and use candied fruit. When soaking the cookies, do not drench them completely; just wet the outer part to make the coconut stick, otherwise they will become too soggy.
