The roasted pumpkin or grilled is a simple and delicious vegetable side dish. I love pumpkin and often use it during this period to prepare easy and tasty recipes. This time, I wanted to try it grilled on the griddle, and it turned out to be a real delight. I flavored it with a delightful dressing, a fragrant sauce to have a marinated pumpkin that is soft and not dry, which will be even better the next day. Ingredients
- 1.65 lbs pumpkin
- 3.5 tbsp extra virgin olive oil
- 1 tbsp white wine vinegar
- 1 clove garlic
- 1 chili pepper
- 1 sprig parsley
- to taste salt
- to taste black pepper
Steps
● Roasted pumpkin is very simple and quick to prepare; first, prepare the sauce: in a small bowl, put the extra virgin olive oil, garlic, and chopped chili pepper, rosemary, oregano, chopped parsley, white wine vinegar, and mix everything together.
● Take the pumpkin, cut it into pieces, and remove the skin. Slice it into slices about 1/8-1/6 inch thick and remove the seeds.
● Place the pumpkin slices on a hot griddle or grill (make sure it’s not cold or warm but very hot; heat it over high flame) and let them cook without moving them for 7-8 minutes. Turn them gently, being careful not to break them, and continue cooking for another 5 minutes. The flame should always be medium, not too high, otherwise, it risks burning without cooking properly.
● At the end of cooking, place the roasted or grilled pumpkin on a tray, salt it, and season it with the marinade prepared earlier.
Notes:
Roasted pumpkin is excellent hot and delicious even cold; the next day, it will surely be even better, soft and flavorful, as it will have rested with the seasoning. So, prepare plenty, also because it’s such a hit made this way!
