The rolled carrot omelette baked in the oven is a quick, light, and delicious recipe. I wanted to prepare an omelette for dinner, I had quite a few carrots to use up and I thought of making a roll of omelette baked in the oven, with julienne grated carrots in the mixture, which I then filled with spreadable cheese, arugula, and sun-dried tomatoes, a vegetarian and gluten-free recipe that my girls also loved. It is a rich and complete dish for the whole family, the carrot omelette is soft and with a creamy filling, delicious freshly made and great even cold, also perfect as an appetizer for Christmas, Christmas Eve, New Year’s Eve, and New Year’s.

Ingredients
- 9 oz carrots (already cleaned)
- 1 cup Parmesan
- 6 eggs
- to taste salt
- to taste black pepper
- to taste spices
- to taste extra virgin olive oil (to grease the pan)
- 3.5 oz fresh spreadable cheese
- 1 oz arugula
- 4 sun-dried tomatoes
Steps
The rolled carrot omelette is very simple and quick to prepare, first put the eggs, salt, grated Parmesan, black pepper, spices as you like (I added parsley and garlic powder) in a bowl and mix well.
Add the grated carrots using a box grater with large holes (the kind used to grate cheese into flakes) and mix everything together.
Transfer the mixture to a non-stick pan slightly greased with a little olive oil (or lined with parchment paper, mine was 12×8 inches) and level it well, bake the carrot omelette in a preheated oven at 392°F for about 15 minutes, do the toothpick test to check the cooking.
Turn the carrot omelette over onto a sheet of parchment paper or plastic wrap and spread a bit of spreadable cheese on the surface, then add the arugula and chopped sun-dried tomatoes.
Using the paper underneath, roll up the filled carrot omelette and then slice it.
Advice:
The carrot omelette can be kept at room temperature for a few hours or in the fridge for a couple of days. You can fill it with the ingredients you prefer or, for a simpler and lighter version, you can also leave it unfilled, it’s delicious on its own.
