The rusticotti are aromatic, delicious, and crumbly rustic cookies with chocolate chips, almonds, and raisins. I ran out of cookies for breakfast and made these, without butter, adding some brown sugar to make them more rustic and tasty. Rusticotti are delicious on their own and perfect for soaking in milk, cappuccino, tea, or hot chocolate. They can be prepared in a few minutes without molds and are really delicious! Moreover, the recipe for these sweets is very easy to remember, as you will use 2 1/3 cups of flour, one egg, and 1/3 cup of each other ingredient 😀

Ingredients

  • 2 1/3 cups all-purpose flour
  • 3 1/2 tbsp milk
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 1/4 cup chocolate chips
  • 1/4 cup almonds
  • 1/4 cup raisins
  • 1 egg
  • Half packet baking powder
  • 1 pinch salt
  • to taste milk and brown sugar for finishing

Steps

  • Rusticotti are very easy and quick to prepare. First, soak the raisins in cold water to rehydrate them.

  • In a bowl, put the flour, granulated sugar, brown sugar, baking powder, a pinch of salt, and mix with a fork.

  • Add the egg, milk, vegetable oil, vanilla, and quickly mix all the ingredients with a fork. Then, add the drained raisins, finely chopped almonds, dark chocolate chips, and form a soft and compact dough.

  • Using a rolling pin, roll the dough on a lightly floured surface to form a rectangle about 3/8 inches thick. Brush the surface with a bit of milk and sprinkle some brown sugar on top.

  • Cut the cookies with a serrated wheel (or a simple knife) and place them on a baking tray lined with parchment paper, then bake the rusticotti in a preheated oven at 356°F for 20-25 minutes until they are slightly golden.

Notes:

Rusticotti keep at room temperature for 5-6 days. You can customize them with the ingredients you prefer, adding other nuts or dried fruits as desired.
