Salmon Gnocchetti

The smoked salmon gnocchetti is a first course based on fish that is super easy and quick to prepare. With the holidays of Christmas and New Year’s Eve approaching, I couldn’t help but suggest one of the dishes that is almost always present on my Christmas Eve table. These salmon gnocchetti are prepared in 10 minutes and are delicious and super creamy but without cream. You’ll impress all your guests with zero fuss. You can also make them with classic gnocchi or potato dumplings, and if you make them at home, they will be a spectacle (but if you’re like me and always short on time, just get the ready-made ones).

Ingredients

  • 2.2 lbs potato gnocchi
  • 7 oz smoked salmon
  • 7 oz cream cheese
  • 2 tbsps extra virgin olive oil
  • 2 tbsps water
  • 2 sprigs parsley
  • 1 yellow onion (small)
  • 1 tbsp brandy
  • to taste salt
  • to taste black pepper

Steps

  • The smoked salmon gnocchetti is super easy and quick to prepare. First, pour the extra virgin olive oil into a pan and lightly brown the coarsely chopped onion for a few seconds, season with salt, add water, and continue cooking for 5 minutes until the onion softens to prevent it from burning.

  • Add the chopped smoked salmon and sauté for a minute, then deglaze with Brandy and let it season for a few more seconds.

  • Add the cream cheese and give a quick stir. Add the cooked potato gnocchetti, and mix everything, if necessary, add a bit of the gnocchi cooking water to make it creamier.

  • Finish the smoked salmon gnocchetti with chopped parsley and black pepper, blend everything, plate them, and enjoy hot.

Tips:

The smoked salmon gnocchetti can be stored in the fridge for a day. To make them creamy again as if just made, heat them in a pot, adding a little water and salt if necessary. To make them even more appetizing, you can add cherry tomatoes (when sautéing the onion) or chopped walnut kernels or a bit of grated lemon zest at the end of cooking. If you don’t have Brandy, use white wine.
