The sausage and stracchino stuffed zucchini is a simple and truly delicious recipe! In the countryside, we are producing a lot of zucchini, and of course, I’ll fill you with recipes featuring this ingredient 😀 I had some sausage to cook, an expiring package of stracchino, and, loving the combination of these two ingredients, I thought of using them to stuff my zucchini. Can I say they are among the best I’ve ever eaten? The sausage and stracchino stuffed zucchini are simple and delicious, they are prepared in a few minutes and with few ingredients and have a soft and creamy filling, they will be loved by adults and children alike, they are truly irresistible, perfect as a second course, but also as an appetizer, my advice is to prepare quite a few because they will literally fly off the table!

Ingredients
- 12 oz sausage
- 7 oz stracchino cheese
- 4 zucchini (medium)
- to taste grated Parmesan cheese
- to taste extra virgin olive oil
- to taste salt
Steps
The sausage and stracchino stuffed zucchini are very simple and quick to prepare, first clean the zucchini, remove the ends, cut it in half lengthwise, and boil it in water for about ten minutes.
Drain the zucchini, cut the center part with a knife, and gently scoop it out with a teaspoon, being careful not to break them.
Put the zucchini pulp in a bowl, chop it, add the crumbled sausage without casing, the stracchino, and mix everything together using a fork (I didn’t add salt because both the sausage and stracchino are already quite salty).
Season the hollowed-out zucchini with a little salt and stuff them with the filling just prepared, sprinkle some grated Parmesan cheese on top, a drizzle of extra virgin olive oil, and bake in a preheated oven at 392 degrees Fahrenheit for 20/25 minutes (or in an air fryer at 356 degrees Fahrenheit for 20 minutes) until golden brown.
Tips:
Sausage and stracchino stuffed zucchini can be stored at room temperature for a few hours or in the fridge for a couple of days, they are delicious both hot and cold.
