The savory pie with 4 cheeses, potatoes, and onions is a truly spectacular puff pastry creation. I didn’t know what to make for dinner, had a roll of puff pastry about to expire, some cheeses to use up, so I decided to make a rustic pie that turned out wonderfully. Not just cheeses, I added potatoes and onions to make the savory pie with 4 cheeses truly special, prepared it in 10 minutes and into the oven it went, it’s a delicious vegetarian recipe perfect as an appetizer, main course, or single dish. It’s rich, super tasty, creamy and cheesy, one bite and you’ll fall in love, it quickly became one of my favorite savory pies!

Ingredients
- 4.4 oz scamorza
- 3.5 oz mozzarella
- 2.6 oz gorgonzola
- 1.8 oz grated Parmesan
- 2 potatoes (small or one large)
- 1 onion (medium)
- 1 roll puff pastry
- to taste extra virgin olive oil
- to taste salt
- to taste black pepper
- to taste rosemary
Steps
The savory pie with 4 cheeses, potatoes, and onions is very simple and quick to prepare. First, unroll the puff pastry, fold it in half, fold the edges inward, and prick the surface with a fork.
Season the base of the puff pastry with a sprinkle of grated Parmesan, add the onion sliced very thinly (if you have a mandoline, feel free to use it), distribute it evenly, and season with salt and pepper.
Now add the 4 cheeses; I chose sweet gorgonzola, scamorza, mozzarella, and grated Parmesan. Cover the cheeses with a layer of potatoes sliced very thinly (again, use the mandoline if you have it), distribute them evenly over the entire surface, covering even the puff pastry, so the cheese doesn’t spill during baking.
Spray or brush a bit of extra virgin olive oil over the potatoes, season with salt, black pepper, rosemary, and bake the savory pie with 4 cheeses in a preheated oven at 392°F (200°C) for 25/30 minutes, until golden.
Tips:
The savory pie with 4 cheeses, potatoes, and onions can be kept at room temperature for a few hours or in the fridge for a couple of days. You can use any cheese you like; Emmental, smoked scamorza, Taleggio, Robiola, Crescenza, or others at your pleasure are fine. For an even more indulgent version, you can add speck, cooked ham, or other cured meats to taste.
