Ingredients
- 1.1 lbs shrimps (already cleaned)
- 3.5 oz arugula
- 1.8 oz pitted olives
- 3 tbsps extra virgin olive oil
- 2 oranges
- 1 tbsp brandy
- 1 clove garlic
- 1 sprig parsley
- to taste salt
- 1.8 oz orange juice
- 0.9 oz lemon juice
- 0.9 oz extra virgin olive oil
- to taste black pepper
Steps
The shrimp and orange salad is very simple and quick to prepare, first, put the oil in a pan and sauté the garlic and parsley, add the shrimps, season with salt, and let them sauté for a couple of minutes, deglaze with the brandy and continue cooking for another 2 minutes.
In a jar, put the lemon juice, orange juice, extra virgin olive oil, black pepper, and also add the sauce released by the shrimps during cooking and shake well, always strain the liquids before adding them to the marinade.
Peel the oranges, remove the peel and the white part, and cut them into pieces.
In a baking dish, put the shrimps, orange pieces, pitted olives, arugula, and add the dressing prepared earlier, give it a good stir to mix all the ingredients well.
Advice:
The shrimp and orange salad can be kept in the fridge for a couple of days if you use fresh shrimps, for one day if you choose frozen ones. For this recipe, if you use frozen shrimps, you must let them thaw completely before cooking them.
