Sicilian Orange Rolls

Sicilian orange rolls are tasty and extremely tender meat rolls, perfect to serve as skewers. It is an easy, quick, and flavorful meat dish with a unique taste. The meat is marinated in orange juice and spices, and thanks to the special breading and delicious filling, you will obtain truly exquisite, soft and stringy orange rolls. These rolls are also perfect for Christmas and New Year’s Eve, dinner, or Epiphany. You can prepare them in advance and even freeze them, so they will be ready to cook. I’m sure they will impress everyone!

Ingredients

  • 5.3 oz primosale
  • 1 cup breadcrumbs
  • 1.8 oz pecorino (grated)
  • 1.8 oz raisins
  • 16 slices pork loin
  • 0.5 oz pine nuts
  • 3 oranges
  • 1 sprig parsley
  • 1 clove garlic
  • 1 leaf bay leaf
  • to taste salt
  • to taste black pepper
  • to taste extra virgin olive oil

Steps

  • Sicilian orange rolls are very simple and quick to prepare. First, place the slices of meat in a bowl, salt them, and add the bay leaf, some black peppercorns, and orange juice. Cover with plastic wrap and let rest in the fridge for at least 30 minutes.

  • Prepare the breading by mixing breadcrumbs, grated pecorino, chopped garlic and parsley, black pepper, and grated orange zest.

  • Bread all the slices of meat, taking them directly from the bowl, on both sides.

  • To the remaining breading, add the soaked and well-drained raisins, pine nuts, and 6 tablespoons of the marinade used for the meat. Mix well.

  • Take a slice of meat, stuff it with some seasoned breadcrumbs and a small piece of cheese, and form a roll. Proceed in this way to make all the orange rolls. You can choose to leave them as is or make skewers; I did not use skewers.

  • Place the orange rolls on a baking sheet lined with parchment paper (keep the seam side down to prevent them from opening), drizzle with a little oil, and cook in a preheated oven at 356°F (180°C) for 20/25 minutes (or in an air fryer at 356°F for 18/20 minutes), until golden brown.

Tips:

The orange rolls keep in the fridge for a couple of days. You can also prepare them in advance, the day before, if you buy fresh meat, not with frozen. If you don’t like raisins, you can omit them, the same goes for pine nuts. To have them ready to cook, you can make them in advance, always using fresh meat, freeze them, and let them thaw in the fridge the night before. For the holidays, they will be ready to cook. You can use the meat you prefer; I chose pork loin, but veal or chicken slices are also fine. Instead of primosale, you can use scamorza, provola, or well-drained mozzarella.
