The Sicilian stuffed zucchini are an easy, quick, and delicious main course, a recipe I love and often prepare. In the countryside, we have a lot of zucchini, and I really enjoy making them stuffed, baked. This is one of my favorite recipes; I love the combination of tuna and zucchini, and I assure you, with this filling, you will adore them! Ingredients
- 5.3 oz canned tuna in oil (drained)
- 1.8 oz cherry tomatoes
- 1.8 oz pecorino cheese
- 0.9 oz black olives
- 6 zucchini
- 2 eggs
- 1 tbsp capers
- 1 sprig parsley
- to taste salt
- to taste black pepper
- to taste oregano
- to taste garlic powder
- to taste extra virgin olive oil
Steps
Sicilian stuffed zucchini are very simple and quick to prepare. First, clean the zucchini, cut them in half lengthwise, and cook them in boiling salted water for about ten minutes. Test their doneness with a fork.
Let the zucchini cool or at least warm, cut the pulp with a knife, and gently scoop it out.
Place the zucchini pulp in a bowl and mash it with a fork. Add the drained tuna, chopped cherry tomatoes, and black olives, capers, eggs, grated pecorino cheese, chopped parsley, oregano, garlic powder, black pepper, and mix all the ingredients well.
Place the zucchini shells on a baking tray, season with salt, and fill them with the prepared stuffing.
Finish the Sicilian stuffed zucchini with a sprinkle of grated pecorino cheese and a drizzle of extra virgin olive oil, and bake them in a preheated oven at 392°F (200°C) for 20-25 minutes.
Notes:
Sicilian stuffed zucchini can be stored at room temperature for a few hours or in the refrigerator for a couple of days. If the filling turns out too soft, add a bit of bread crumbs.
